I was at a playdate a few weeks ago with my friends and their munchkins. One of the girls, Tanya, brought this corn and creamy spread and I am telling I was hooked. First, I have never grilled corn. Second, I’ve never really had corn with anything but butter. Oh to my wonderful surprise, this was fantastic. The corn grilled with husks on keeps the corn from drying out and it tasted absolutely fantastic and was so juicy. Seriously, grilled corn is enough of a recipe in itself. Well, she then had this spread, oh hold me back, it’s so good!. Just takes corn to a whole new level. Like I cannot stop myself new level like there is no self-control lever. I’ll stop, I think you get the picture.   😉

  • Prepare creamy spread for corn: Chop cilantro. Mix mayo, sour cream, cilantro, garlic and a squeeze of lime. Set aside.

  • Place fresh corn on the grill on med/high heat. Close cover and grill 15 to 20 minutes, turning about every 5 minutes until all sides are grilled. Corn is ready when piercing with a knife and kernels are tender.
  • Remove husks. Butter corn. Add some creamy spread to corn, squeeze some fresh lime, and sprinkle with Parmesan cheese and Chili powder. Enjoy.
