My kind of salad is one that is quick to make, easy to serve and tastes wonderful. This salad happens to be one of those. Just chop, mix and serve. It’s amazing how much flavor the cauliflower florets along with the cucumbers and red pepper have when added with crab, a unique salad indeed.

This is a great salad to make for parties since it doesn’t immediately get soggy. I love the taste of crab meat; it truly amazes me how well it goes in salads.

How to make light crab salad

Making a light crab salad gets any easier than this crab salad. All you need to do is cut all of the vegetables, add the mayo as a dressing, season with salt, pepper and fresh dill. Done! Easy peasy.

Be sure to keep the cauliflower florets small, you don’t want them to overpower the rest of the ingredients. Keep all of the ingredients similar in size.

Ingredients
  • 8 oz crab meat, sliced
  • 1 red pepper, sliced
  • 1/2 red onion, sliced
  • 2 small cucumbers, sliced
  • 1 ½ cups cauliflower, small florets
  • salt & pepper to taste
  • 1/3 mayo
  • 1 Tbsp Dill
Instructions
  1. Slice crab, pepper, cucumbers, onion into thin slices. Cut cauliflower in small florets.
  2. Combine all ingredients together.
  3. Add dill, add mayo, salt and pepper. Mix everything.
  4. Add some more dill for decor if desired. Serve.
