Crab Stuffed Salmon

Salmon is a favorite dinner in our home. There are so many different ways to prepare with and so many things you can enjoy it with. So why not add a Parmesan crab stuffing to the mix? This recipe is so delicious and simple.If you are like me and like to get dinner out of the way earlier in the day this is great to prepare ahead of time. Prepare everything in advance and just bake before serving dinner.

Ingredients:

2 lbs salmon

Salmon seasoning-

1 tsp thyme

1 tsp rosemary

¼ tsp pepper

1 tsp salt

1 tsp parsley flakes

2 garlic cloves, minced

2 Tbsp Extra Virgin Olive Oil

Crab stuffing-

8 oz crab meat

1 celery stick

1 ½ Tbsp breadcrumbs

1 ½ Tbsp Parmesan cheese

1/4 cup mayo

1/4 cup cheese (I use four cheese, mozzarella is fine too)

1/8 tsp pepper

1/4 tsp salt

1 tsp parsley flakes

3 Tbsp butter, melted

Serves: 4

Directions:

Prepare the salmon seasoning:

Add thyme and rosemary to a small bowl. With your fingers crush the herbs a bit to get them into smaller pieces. Add the pepper, salt, parsley flakes, mix. Add the minced garlic,  mix. Add the oil, mix.

Place the pieces of salmon into a 9″x13″ baking pan. Turn salmon upside down. Brush the bottom with the salmon seasoning.

Turn salmon back over and cut the salmon into four equal pieces. Make an opening in the middle of each salmon (don’t cut in half, crab stuffing will just fall apart). Distribute the rest of the salmon seasoning between the pieces of salmon. Add to sides as well as tops.

Cut the crab meat into smaller pieces (don’t chop too thin though).  Chop the celery into tiny pieces.Add all of the ingredients for the

Gently open salmon. Stuff completely with crab stuffing. Do this to all four pieces. Add the rest on top but keep the meat together in the middle. You can sprinkle some freshly grated pepper or parsley flakes atop the crab if you would like.

Bake covered 15 minutes in preheated oven to 365°F. Remove foil and bake another 15-20 minute. DON’T over bake. Salmon will be too dry. Right before serving, pour melted butter over each salmon/crab.

Dig in. Oh but do share with your loved ones, it’s very tempting to just devour it all yourself. I know the feeling… Hehe;)..

    First of all, I’m more of a lurker then a poster. But this recipe was such a hit that I had to say something! We are 5 in our family. So when the recipe called for 2 teaspoons of spices I was liberal. When it called for 2 Tbsp EVOO, I was generous again…you get the idea. When I look at a recipe, I consider how many ingredients? Do I have all the items?
    Is the recipe easy? Yes, yes it is! I don’t usually cook with fresh herbs. I use dried stuff from the spice rack. But last night I used fresh. I wish I took a picture. I’ve got nothing to show for it but clean plates.
    I do have one question though…the 3 Tbsp of butter at the end of the recipe, was that to drizzle on top of the fish before serving or to mix in the crab stuffing? I mixed it in and brushed additional butter on and everyone was asking me to make this again before the meal was over. It was love at first bite!

      I apologize for the confusion about the butter, I’ll work it differently. The butter is supposed to just be drizzled over the salmon before it’s served, though I’m sure it tasted great adding some into the crab mixture.

      Not if it’s covered half that time☺. If cooking it less, the crab stuffing will not have enough time to get hot and cheese will not melt?..

    In some of the photos it looks like the crab stuffing is layered between the salmon as well as tucked into a cut on the top of the fillet. Could you please describe this technique, because layers of crab and cheese and salmon are most appealing.

      That’s probably just the white ooze that salmon gives off when it cooks, not more stuffing.
