Baked Chicken Legs and Potatoes-

This recipe for baked chicken legs and potatoes is outstanding. Once baked in the marinade and seasoning, the chicken drumsticks are so juicy, crispy and flavorful. The added potatoes with carrots and mushrooms are great and no other side is needed. Winner!

How Long to Bake Chicken Legs-

The length of time to bake will depend on the temperature of oven and size of the legs. If the legs are not crowded on a baking sheet, the baking time at 400°F will be about 35-45 minutes.

In this recipe, the legs are crowded and baked with potatoes and will require a little more time to cook, about 50-60 minutes.

Step by step on how to make One Pan Baked Chicken legs and Potatoes and Vegetables.

Tips How to Make Chicken & Potatoes in the Oven:

  • Your oven and the size of the chicken drumsticks being used along with potato sizes will alter the cooking time of the dish.
    • Start checking for readiness at 45 minutes into baking. Continue baking, as needed until chicken is completely cooked and potatoes are easily pierced with a knife.
  • Before serving, pour the juices from the bottom of pan over everything (or simply gently toss).
  • If you have time to season the chicken a few hours in advance (or in the morning), it will give the seasoning enough time to penetrate deeper into the chicken and will taste even better.
    • Combine the ingredients for the seasoning and very lightly season the chicken in a Ziploc bag and keep it refrigerated. Then continue with the recipe per instructions.
  • Enjoy the meal with your favorite dip: ketchup, Sriracha or barbecue sauce.

Can I substitute for a different piece of chicken?

Yes, you can substitute the chicken drumsticks for a different cut of chicken.

  • Instead of the chicken drumsticks, chicken thighs may be used. If using boneless/skinless thighs, the cooking time will be less than the drumsticks (check the readiness of chicken with a cooking thermometer, it should read 165°F).
  • If you will be substituting with bone in/skin on thighs, the cooking time will depend on the size of the chicken pieces.

Can just do it with the chicken and the potatoes? My kids don’t like vegetables

    • Valentina's Corner 09/11/2019, 10:36 am Link Reply

You most definitely can, Adianez. You can also just add some to one side of the dish if you do like veggies. Enjoy

Can the drumstick be frozen or do I need to thaw them first?

    • Valentina's Corner 08/17/2019, 6:23 pm Link Reply

The need to be thawed first, Anita. Enjoy. 🙂

Hi! I was wondering if mushrooms are required and if the baby carrots are required or can I just use regular ones cut up?

    • Valentina's Corner 07/01/2019, 3:45 pm Link Reply

Daryna, mushrooms are optional and you can totally cut regular carrots into smaller sizes. I hope you love the easy dish as much as we do. 🙂

Ah-mazing! Made this tonight and the whole family ate it up fast. Even the two year old didn’t complain about the carrots! So good. I already wrote it down and added it to the rotation. I just skipped one more dish though and added the sauce and spices together. 🙂 Thanks!

Trying this now! Just wondering if a pre season the chicken, do I still need to add another lot of seasoning to the chicken and mayo mix

Can you use a whole cut up chicken and how would I adjust temp and time?

    • admin 04/19/2018, 2:18 pm Link Reply

      Hi, Donna.
You sure can. The baking time will remain the same, just be sure to cut the chicken pieces into equal parts. If chicken pieces are larger in size, cook them for 10 minutes before adding the potatoes and vegetables. Enjoy.

  • Eva 02/05/2018, 3:03 pm Link Reply

Is it possible to make it with chicken breast???

    • admin 02/06/2018, 11:17 am Link Reply

You sure can, Eva. Just cut your potatoes into smaller pieces and bake 20-30 minutes. The chicken breast without bone will cook quicker than the chicken drumsticks. I’d love your feedback once you try it. 🙂

  • Alina P 01/24/2018, 11:57 am Link Reply

What do you mean by mix and repeat? Do you mix in the mayo mixture a little at a time?

    • admin 01/25/2018, 12:38 pm Link Reply

Hi Alina, I apologize for the confusion in wording, I’ll fix it. So once you completely coat it with the mayo mixture. Sprinkle half of the seasoning over the ingredients. Mix everything and then sprinkle the remaining seasoning and mix again. (To ensure seasoning is evenly added :).)

    This looks easy and yummy,
You don’t have to cook any of the ingredients prior to baking it in the oven? Just wanted to make sure.. mushrooms won’t be dry or undercooked?
Thank you, I want to try it out tonight for dinner

    • admin 01/18/2018, 12:19 pm Link Reply

Hi, Tanya. Nope, no need to do anything. Because you add the mayo/butter/oil mixture as a rub over all of the ingredients. It keeps it from drying. 🙂 Enjoy!
