Ultimate Breakfast Burrito

The ultimate breakfast burritos in tortillas filled with rice eggs and vegetables. This will be a keeper recipe for sure.

I love breakfast. I enjoy making and eating breakfast meals most. Don’t get me wrong though, that does not mean I am a morning person ;). A hot cup of coffee fixes that problem though, and once it is in my system, all is good, really good. But truly, getting up at 5:00 or 6:00 is such traumatic torture to one’s body, it really needs more rest than that right? I didn’t even go to medical school and know that, wink, wink. That said, I am usually up 6:30 on a school day, sigh. Gatta feed the little munchkins before they head off to school or something of that nature. After the coffee has done its work, I truly do love sitting at the kitchen table and talking with the kiddos before they are off to school and leave me for like 8 hours, sniff, sniff. Our 4 year old decides to wake up every single morning with the rest of the kids. I have tried on many occasions to explain what he is missing out by not sleeping in, that he will look back and say what was I thinking getting up so early, but no, the child is set in his ways, haha. He will think of me later and say mom was right all along. Now the baby girl is a smart one, she gets her beauty sleep, she sleeps until a good 10:00 (I secretly wish I was napping with her but such is life, way too much to so ). Amazing what kind of emotions breakfast burritos can stir up in me, lol.

I love breakfast burritos. I especially make them when we have leftover rice from the previous night and use that up so I don’t throw food away. Or I will make several batches and freeze so I have a great breakfast (for when coffee doesn’t work in the morning) but the Mr. and children need to be fed. These burritos filled with scrambled egg, rice, sausage, peppers, mushroom, and tomatoes oh and the cheese are soo hearty and filling. I mean you just cannot go wrong here. You can tweak it to your liking and omit ingredients or add whatever else you may think of or have on hand (spinach is also great to add).

You can use any meat you like; I use sausage, ham, bacon or when we have leftover chicken and rice, I will just chop the chicken and use that too. In the pictures and the recipe I have the rice separate (so it looked peerrtiier to take a picture), but I usually just add the rice in with the eggs (so much faster rolling them up that way).

Ingredients for the Ultimate Breakfast Burrito-

10 soft medium flour tortillas

½ cup rice, uncooked

4 oz sausage, or any other meat

1 tsp oil

4 oz mushrooms

½ small red pepper

1 tsp oil

5 large eggs

1 Tbsp sour cream

1 Tbsp milk

1 ½ cups shredded cheese

3-5 Tbsp oil, for sautéing

Herbs, optional

Serve with sour cream, Sriracha, ketchup or barbecue

Makes: 10 breakfast burritos

How to make the Ultimate Breakfast Burritos-

Cook rice according to package instructions. Once cook, drain water and run rinse under cold water, set aside.

Cut your meat into small pieces (I had sausage links so I just used those, sausage patties or any other sausage or meat will work). Chop pepper, mushrooms, and tomato (keep everything separate once chopped).

In a large skillet, on med/high heat add 1 tsp oil, once hot, add the sausages. Cook until meat is cooked, about 3-4 minutes, break up any large chunks and mix as necessary.

Remove sausage from skillet and add the mushroom to the skillet, cook about 2-3 minutes until mushrooms are cooked, lightly salt and pepper them. Add the chopped pepper and 1 tsp oil to skillet, cook until pepper is tender (1-2 minutes).

Add the chopped tomato. Add and the sausage back to the skillet.

In a bowl, whisk together eggs, add the sour cream and milk and whisk again, salt and pepper to taste. Pour the eggs into the skillet. Keep mixing and cook until eggs are scrambled. Remove from heat. (If you will be adding the rice into the eggs, do so when the eggs are halfway scrambled). Remove from heat, don’t overcook or the mixture will taste dry. If you like herbs, add some chopped herbs.

Top a tortilla with a little bit of rice, then the scrambled egg mixture and finally some cheese. Roll the burrito up, tuck in the edges as you roll. Repeat with all of the burritos. At this point, you can freeze the burritos in a freezer Ziploc bag.

To cook burritos, heat 2 Tbsp oil in a large skillet on med/high. Add the desired about of burritos, cook turning burrito until each side is golden and crispy and the inside mixture is nice and hot (about 5-6 minutes), keep turning burritos so all of the sides are crispy. Add more oil if needed when a new batch of burritos is added.

Serve with your favorite condiment. My children all prefer different thing, some like sour cream (more like a burrito with the sour cream;)..), another likes barbecue and yet another ketchup. Then there is me who mixes sour cream with Sriracha and ketchup, NO I am not pregnant but I promise it’s fantastic oh and canned jalapenos!. You’re welcome for the brilliant concoction. :O)..

With  rice, meat, and veggies, this can easily be served as a lazy dinner, not that any of you would have one, but you know, just in case, hehe.

    Made couple of this from my son’s school lunch and he loved it! Which is huge cause he is such a picky eater….. thank you Valechka for another great recipe!
