Have you had your spring break yet? We did last week. It’s so nice to have kiddos home for a week. We went to visit a sister church of ours in Syracuse, New York and the kiddos went with us. It can be challenging traveling with children but we actually had a really great time and this mama survived. On Friday we stopped at Niagra Falls and on Saturday at a friend’s house in Rochester. I haven’t seen her since before we got married, which is like forever ago. Do you have those friends where you don’t see each other but once you meet up it seems like no time passed? She’s one of them. It was so nice to get out of our little town and visit friends. It was also so nice to meet friends of our blog. Yes, I was blushing like crazy. It’s one thing to be behind the computer screen and another to actually meet people that read our blog. Makes me so nervous and my heart’s rhythm get a little out of whack. Get so nervous, but thank you to those that came up and introduced yourself. I felt so loved.
Coming back from our trip calls for days of laundry and ironing. Though we only took one suitcase with minimal clothing for the whole family, I still had loads and loads of laundry to wash. Once all of my laundry was washed and somewhat ironed (still ironing), it was so nice to get back into my kitchen. I don’t mind eating out every once in a while. I enjoy not having to cook but I tell you what, I love being in my own kitchen and cooking myself. This recipe was the dessert I baked when I got back into the kitchen. The inspiration came from my Chocolate Chip Cake Bars (there us a video of our kids making it HERE). I wanted something like that but with coconut flakes. My husband loves anything with coconut in it, it was an immediate hit. Everyone loved it.
My son asked if the recipe was on the blog. I told him it wasn’t yet and he said it should be my next recipe, so here we are. I love this recipe. It is so simple to make and will be a hit with the adults and kids alike. You can never go wrong with chocolate chips in a recipe. The added coconut just adds something so special to the recipe. And the cream cheese, yes! I have yet to try a recipe that isn’t absolutely delicious that has cream cheese in it.

P.S. I cut my bars really big, just so it was easier to photograph. Those are huge pieces, do cut yours into smaller pieces.:)
You will need:
1 -9×13 pan Parchment paper Baking spray
1 box classic yellow cake mix
1/3 cup oil
12 oz (1 ½ packs) cream cheese, room temp
1 cup chocolate chip morsels, divided
1 cup coconut flakes
Preheat oven to 355°F.
Cover baking pan with parchment paper and spray with baking spray.
Combine cake mix from box, oil and egg in a bowl. Beat cream cheese until creamy. Add 2/3 cup chocolate chip morsels and mix with a spatula.
Spread cake mixture evenly in pan. Add the cream cheese mixture over cake mixture. Take the remaining 1/3 cup morsels and add to the top of cream cheese layer. Then add the coconut flakes.
Bake 25-30 minutes or until the coconut flakes become golden in color.
These can be enjoyed warm or cooled. Enjoy friends.
