Pumpkin Cream Cheese Bundt Cake

Amazing dessert recipe for Pumpkin Cream Cheese Bundt Cake. It’s such a stunning recipe and is so beautiful when served. Pumpkin and banana batter with chocolate chip morsels and a cream cheese layer.

Easy Pumpkin Cream Cheese Bundt Cake Recipe
I love me some pumpkin during fall baking. I am not sure why but pumpkin recipes truly make it feel like fall when you serve dessert with pumpkin as the main ingredient. We have been baking all kinds of recipes with pumpkin. The phyllo pumpkin turnovers are a favorite and have been on repeat in this home ever since we created the recipe. If you haven’t tried them yet, you are missing out. I was trying to create something that was a simple recipe but had a wow factor when served. After several unsuccessful attempts at this recipe. It was finally a winner! Oh, my. So good and SOO mouthwatering delicious. Combination of pumpkin and banana batter with chocolate chip morsels and a cream cheese layer. Yes!

* You can either use one or two bananas. If you like pumpkin and prefer the pumpkin taste to be dominant, just use one banana. If you want a more balanced taste, use two bananas.

Tip: So the first trial I did, I spread the cream cheese layer evenly over the first batter layer and then added the remaining batter. When I flipped the cake, the layers kind of came undone and it wasn’t a pretty cake. Not at all, lol. So, be sure when adding the cream cheese, you leave room on the inside and outside of pan for more pumpkin batter. Then once flipped, you’ll just have the beautiful surprise of cream cheese filling inside.

This was such a fun video to shoot for Facebook and Instagram. It was kind of scary to get myself in there if I am truly honest. Urghh. That took a ton of courage as I am not a fan of having myself in the video. What do you guys think? Are you enjoying the hands only videos or do you kind of like this style more? Ingredients:

1 3/4 cups flour, sifted

½ tsp cinnamon

½ tsp baking soda

1 tsp baking powder

1 tsp pumpkin pie spice

2 large eggs

3/4 cup sugar

2 ripe bananas *see note

3 Tbsp oil

1 cup pumpkin puree

Cream cheese layer-

1 (8 oz) cream cheese

1/2 cup sugar

1 cup chocolate chip morsels

Makes: 1 9×5 inch loaf

Powdered sugar, for dusting

Makes: 1 round Bundt Cake

Directions:

Preheat oven to 350°F at step 9 .

Lightly grease a round Bundt cake pan with butter or baking spray.

Beat cream cheese and sugar. Set aside.

Beat cream cheese and sugar.

In a medium bowl combine flour, cinnamon, baking soda, baking powder and pumpkin spice. Set aside.

In a large bowl, on medium speed, beat sugar and eggs about 2 minutes.

With a fork mash the banana(s). Add banana(s), oil and pumpkin puree to bowl. Give it a quick mix on low speed.

Add flour mixture and mix on low speed.

Add chocolate chips and mix with a spatula.

Combine ingredients for cake batter.

Pour half of the pumpkin batter into the pan. Add the cream cheese mixture leaving room on edges of the pan. Gently add remaining mixture. Spread evenly.

Add batter, cream cheese to pan

Bake in a preheated oven at 350°F 25-30 minutes. Check for readiness with a toothpick.

Remove cake loaf from the oven as wet onto a cooling rack. Let the cake cool for a few minutes. Release edges of cake from pan with a spoon (if necessary).

Place cake platter onto Bundt pan. Holding the two together, flip the cake. Let the cake cool completely. Dust with powdered sugar. Enjoy.

    I took your advice about adjusting the quantity of bananas, to taste, and used 3 ripe Dwarf Cavandish Bananas from our tree. This equates to about 1 1/2 regular bananas.This cake came out well. Your tip about keeping the cream cheese filling away from the edges allowed my cake to turn out on the rack in one piece.
