Slow Cooker Beef and Vegetable recipe. This crockpot recipe makes the meat so tender and juicy. Great served with rice or potatoes.
When I did a questionnaire on one of my ending posts last year, I was pleasantly surprised how many of you were looking forward to slow cooker meals. I told you I would get started posting some of my favorite meals we already have in our recipe book, and here we are. I absolutely love this recipe as it literally takes five minutes to throw everything into the slow cooker (or Crock-pot) and get this going and you can go and enjoy your family. How awesome is that? The beef becomes melt in your mouth soft and the added vegetables are like the cherry on top. Mashed potatoes, rice or even pasta go well with this roast. You can finish off the meal with these fresh baked sweet buns that are SOO good.
This is a recipe my mamma always makes. She’s such an amazing cook. Can we just talk about her for a minute? She raised 11 children and we all came out something okay, how she did that is beyond me! I am so proud to call her my mom. I think one of the most inspiring things about her is her ability to always be on top of everything. She is still working part-time, her home is always clean and she always has something to eat. We love to visit my parents on Sunday and mom always has something so delicious to serve. This pot roast we tried was on one of our after church Sunday visits to our parent’s house. We came in and the aroma in the house was more than I could explain. She had braised potatoes in the oven and food was ready to be served, what a wise woman. Anyhow, I immediately fell in love with the meal and am really excited to share her recipe with you.
Note: *Chuck roast, shoulder steak, or pot roast can be used in this recipe.
Ingredients for Slow Cooker Beef and Vegetables-
3 – 3 1/2 pounds beef*
4-6 garlic cloves, halved
1 1/2 cups Italian dressing
How to make Slow Cooker Beef and Vegetables-
Cut meat into 1 ½” – 2” pieces. Cut carrots and celery into strips. Quarter onion.
Add all ingredients to bowl of slow cooker, pour dressing, toss lightly to combine. Cover and cook on low for 6-7 hours (or on high for 4-5 hours), or until the beef is tender and falls apart easily when shredded with a fork.
If not using immediately, refrigerate with its juices in a sealed container.

- 1 medium onion
- 2 carrots
- 2 celery ribs
- 4-6 garlic cloves, halved
- 1 1/2 cups Italian dressing
- Cut meat into 1 ½” – 2” pieces. Cut carrots and celery into strips.
- Add all ingredients to bowl of slow cooker, pour dressing, toss lightly to combine. Cover and cook on low for 6-7 hours (or on high for 4-5 hours), or until the beef is tender and falls apart easily when shredded with a fork.
- Shred beef in with a fork. Serve as a pot roast with your most beloved side dishes. Our kiddos even love adding barbecue to their meat and enjoying a sandwich.
- If not using immediately, refrigerate with its juices in a sealed container.
