Crockpot Fajitas are ideal for busy evenings. Prepare all of the ingredients and into the crockpot they go. Most chicken fajitas recipes only use chicken and pepper with onions, we add more flavor by adding carrots and mushrooms – amazing! Try it, you won’t regret you did.

I like to have dinner prepped and ready before our kiddos come home from school. That’s why I love a good slow cooker recipe. You just prep evening and forget about dinner. The aromas of slow cooking food fill the home as you enjoy the time with your family. Winner!

How to make Crockpot Chicken Fajita Recipe-

Prepare all of the ingredients by having ingredients thinly sliced. NOTE: This can be done the night before as well.

Cut the chicken breast into thin strands. Cut the carrots and peppers into same thin strands. Cut onion in half and slice so the size is uniform with the carrots and peppers. Slice cleaned mushrooms. Finely chop fresh tomatoes.

Once you are ready to start the cooking process. Into the bowl of the slow cooker, add the tomatoes and garlic. Then, all of the vegetables and chicken.

Combine all the ingredients for the homemade fajita seasoning. Season ingredients and toss gently, add remaining seasoning and toss gently again.

Close lid of the crockpot, set cooking time and enjoy!

Refrigerate leftover chicken fajitas for 1 – 2 days. Reheat and enjoy with rice or as a salad over lettuce with sour cream and guac.

How long to cook Chicken Fajitas in a Crockpot?

If cooking on high, cook fajitas 3-4 hours. If cooking on low, cook fajitas 5 hours.

Gently mix everything before serving. Chicken and vegetables will be SOO tender and juicy!

How to serve Chicken Fajitas-

Since there is so much flavor from all of the vegetable and chicken with homemade seasoning. You can serve the chicken fajitas as they come out of the slow cooker. Add some fresh lime juice, if desired.

Few other toppings for Chicken Fajitas: Shredded lettuce, sour cream, fresh guacamole or cilantro over some flour tortillas.

Ingredients
Chicken Fajitas-
  • 2 pounds chicken breast
  • 1 1/2 peppers, strands
  • 1 large carrot, strands
  • ½ large onion, sliced
  • 6 oz mushrooms, sliced
  • 1 cup tomatoes, finely diced
  • 3 garlic cloves, minced
  • cilantro, for serving
  • lime, for serving
Seasoning-
  • 1 tsp salt
  • 1 ½ tsp paprika
  • ½ tsp pepper
  • ¼ tsp ground cumin
  • ½ tsp ground chili pepper
Instructions
  1. Slice chicken into uniform strands. Slice onion and mushrooms. Cut carrots and peppers into thin strands. Mince garlic. Dice tomatoes.

  2. Add the diced tomatoes and garlic into the bowl of the slow cooker. Then all the vegetables and chicken.

  3. Combine all the ingredients for the seasoning. Season ingredients and toss gently, add remaining seasoning and toss again.

  4. Close slow cooker with the lid and cook about 5 hours on low and 3 – 4 hours on high. Cooking time will vary depending on your slow cooker and the size you cut your ingredients. Gently stir everything and enjoy as desired.

      I always get so excited when our readers (our online family) notice little things like that. Makes me oh so happy. 🙂
      You can use either seasoning. I just wanted it to have its own taste, one that is a little different than the baked one. Hope you love this recipe as much as we did!

    Did you say 5 hours on slow AND 3-4 hours on high? Or it is suppose to be OR? Either or? Please verify, i do not cook in a slow cooker, but have one and would like to try. Preassure cooker cooks everything fast. I use it to have soup in 20 minutes on the table. 10 minuts – prep, 10 minuts- cook under pressure and any soup with meat is ready on the table. I like my pressure cooker!

      Please don’t judge me – I have yet to try cooking in a pressure cooker (yes, cheeks blushing). It is on my to-do list. I don’t see why it wouldn’t work, except I have no idea for how long. If you try it, I’d love to hear feedback. 🙂
