Tuna and Egg Canapes

Okay, so if you haven’t noticed, I have a love relationship with canapes (open-faced sandwiches). Canapes are the perfect additional to any party or get together. We especially love canapes for lunch with kids at home during the summer. They are super easy to make, easy to serve and everyone is happy. I particularly love these open-faced sandwiches because my children, who do not like tuna, love these! If children approve, that’s a winner in my book. When I serve these for my children, they don’t like anything else on them. I, on the other hand, like to take them up a notch. First, I love adding chopped sweet onion when mixing. Then I like making some with cucumber, tomatoes, canned jalapenos or avocado slices. First add a very thin tuna layer over the slice of bread, then add the sliced vegetable and top with a generous portion of tuna. So simple, yet so yummy. Add some chopped herbs before serving if desired.

Ingredients for Tuna and Egg Canapes

3 (5oz) cans tuna

3 boiled eggs (whites)

2/3 – 3/4 cup mayonnaise

2-3 garlic cloves, minced

Salt, pepper to taste

Baguette, sliced

Cucumber, optional

Sweet onion, optional

Tomato, optional

Jalapenos, optional

Avocado, optional

Fresh herbs, chopped, optional

How to make tuna and egg canapes-

Preheat oven to 365F.

Slice baguette into about 24 slices. Bake 6-8 minutes until slices have a crunch to them. Set aside to cool.

Drain water from the canned tuna. Grate egg whites on grater (I like to use the smaller holes). Add mayo, garlic, salt and pepper to taste and mix well.

Add some of the tuna mixture to the toasted bread. If adding other vegetables, first add a very thin tuna layer over the slice of bread, then add the sliced vegetable and top with a generous portion of tuna. So simple, yet so yummy.
