Banana Zucchini Cake Bars

How to Make Banana Zucchini Cake Bars:

  1. Preheat oven and line a baking pan with parchment paper.
  2. Make cake. In a small bowl combine the flour, cinnamon, baking soda, and baking powder; set aside.
  3. In a large bowl, on medium speed, beat sugar and eggs about 2 minutes, until fluffy.
  4. With a fork mash the bananas. Grate zucchini. Add bananas, zucchini, oil, and vanilla to sugar/egg bowl. Give it a quick mix.
  5. Add half of the flour mixture and mix, add remaining flour and mix well to combine.
  6. Pour batter into the baking pan and bake, Check readiness with a toothpick, it will come out clean if ready.
  7. Prepare cream cheese frosting. Beat cream cheese and powdered sugar until creamy.
  8. Spread cream cheese frosting over the cooled cake.

Decorate zucchini cake-

Take melted chocolate and place it into a Ziploc bag, snip off an edge of the bag.

With the chocolate, make a few rows atop the cream cheese layer Take a toothpick and make swirls with the chocolate. Refrigerate for an hour.

Ingredients

Cake-

  • 2 large eggs
  • 1 cup sugar
  • cups flour
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 1/2 cups grated zucchini
  • 2 ripe bananas
  • 3 Tbsp oil
  • ½ tsp vanilla

Cream cheese layer-

  • 8 oz cream cheese, room temp
  • 1/3 cup powdered sugar
  • 1/2 cup chopped milk chocolate, melted

How to make Banana Zucchini Cake Bars

  • Preheat oven to 365°F.
  • Line a 9x13 pan with parchment paper. Lightly butter (or spray with baking spray).
  • In a bowl combine flour, cinnamon, baking soda, and baking powder; set aside.
  • In a large bowl, on medium speed, beat sugar and eggs about 2 minutes.
  • With a fork mash the bananas. Grate zucchini. Add bananas, zucchini, oil, and vanilla to sugar/egg bowl. Give it a quick mix.
  • Add half of the flour mixture and mix; add remaining flour and mix.
  • Pour batter into a pan. Bake in a preheated oven at 365°F for 17-20 min. Check readiness with a toothpick, it will come out clean if ready.
  • Completely cool cake.
  • Beat cream cheese and powdered sugar until creamy. Spread cream cheese layer over the cake.
  • Take melted chocolate and place it into a Ziploc bag, snip off the edge. Make a few lines atop the cream cheese layer with the chocolate. Take a toothpick and make swirls with the chocolate. Refrigerate for an hour. These are absolutely amazingly delicious if enjoyed fresh, meaning the same day.
