Remember THIS Broccoli Salad I posted a while back? It has become such a huge hit on my blog. It’s absolutely fantastic for parties and pot lucks. I was making that Broccoli Salad for a party recently and had bacon I needed to use up and that is how this recipe was created. It was gone within minute and all my guests wanted the recipe. The nice person that I am, I am sharing the recipe with you as well, you are welcome. Can I just say that cauliflower and broccoli florets with tomatoes, corn, cheese and bacon pieces are an absolutely fantastic combination! Onion is an optional ingredient. I know not everyone is a fan of onion. Ha! My brother hates onions. I am telling you what, that guy can sense onions in food without even tasting it. I once decided to test him (promise, everyone was same in the experiment, ha). I chopped the onion so small you couldn’t even see it, and added just a few tablespoons. Seriously, he almost chocked on me and perhaps didn’t speak to me for a week or so. Enough about onions. I especially love how colorful all the ingredients in the recipe are. Me, being a visual person, I think foods that are colorful are enjoyed more. I mean if I gave you a salad with only greens and boring tones and this beauty, I think you’ll agree, the brain plays a trick on it. It sure does.
This salad can be prepared a day in advance, keep covered and refrigerated. Mix before serving. We have guests at our house all the time – no joke, all the time. The last thing I want to do it be slaving in the kitchen as my friends are enjoying each other’s company. I want to be in on the action, you know what I am saying. I love that I can do all of my chop-a-choppin the day before and even make my dressing. Then before serving, mix everything and whalllaa.

Ingredients for Cauliflower Broccoli Bacon Corn Salad-
1 medium head broccoli (3 cups florets)
1 small head cauliflower (3 cups florets)
½ small head red onion, onion
4 oz Colby Jack cheese
1 cup canned corn, drained
4-6 slices bacon, cooked
1 pint cherry tomatoes
2/3 cup mayonnaise
3 Tbsp sour cream
2-3 garlic cloves, minced
Salt and pepper, to taste
How to make Cauliflower Broccoli Bacon Corn Salad-
Cut cauliflower and broccoli into small florets. Cube cheese. Dice onion. Slice bacon into pieces. Slice or quarter tomatoes. Mix everything.
Combine ingredients for dressing. Add ¾ of the dressing to the salad and mix again. Add additional dressing as needed. Enjoy friends!
