If you love Spinach Artichoke Dip, you will love these Chicken Spinach Artichoke Boats (they were inspired by THESE canapes)!. This french bread loaded with the dip inspired filling will become a favorite. Adding chicken makes this bread a great dish even for lunch with a side salad.
1 (12oz) can chicken breast
1 1/2 cups chopped spinach
1/2 cup mayonnaise
4 oz cream cheese, room temp
2 garlic cloves, minced
1 cup shredded mozzarella cheese
1/2 cup – 1 cup shredded mozzarella cheese, for the top
1 loaf French bread
Makes: 1 loaf (4 boats)
How to make Chicken Artichoke Boats-
Chop spinach. Drain artichoke, chop. Drain chicken. Cube tomatoes. In a bowl, combine all of the ingredients.

Enjoy immediately.

- 7 oz canned artichoke hearts (half of a 14oz can)
- 4 oz cream cheese, room temp
- 2 garlic cloves, minced
- 1/2 cup cubed tomatoes
- 1 cup shredded mozzarella cheese
- 1/2 - 1 cup shredded mozzarella cheese (for the top)
- 1 loaf French bread

Chop spinach. Drain artichoke, chop. Drain chicken. Cube tomatoes. In a bowl, combine all of the ingredients.

Cut bread in half. Then horizontally in half again. Spread mixture evenly over sliced bread. Top with mozzarella cheese.

Bake at 365F, 15-18 minutes, or until the cheese has melted and becomes golden around the edges.

Enjoy immediately.

Oh nice, im gonna have to start writing it down. Get a nice notebook and get organized with the recipes, while kids are at school. I have 1st grader and 2nd grader, and 3 younger kids at home with me 🙂 but it seems like the house is quiet when older ones are in school.
Forgot, if you’re into computers, Pinterest is a superb way to organize recipes. You can even have “secret” boards.. (You know, for those recipes that were a fail.. hehe..)

It’s so easy to get so caught up with “all my time/energy is for the kids” and forget about you. Pamper yourself, rest, read a book. I just made this and it was soooo yummy! My husband and kids loved it, thank you so much for all your great recipes! This will be my keeper recipe for parties and quick get together sandwiches. Love your website. One question how do you keep all your recipes? I get lost sometimes and not sure if I should be printing them out or just remember in my head, lol but it gets so hard, like so many websites to remember but then printing all the recipes the book gets to fat lol.

Ha.. I know what you mean about recipes. Best advice, or what I do, is I just have a little book with names of different dishes I love and blog it’s from. So Appetizers, Breakfast, Lunch, Salad, Dinner, etc. Then say this recipe I just have under “Appetizers” Valentina’s Corner Chicken Artichoke Boats.. If I ever need that recipe I just Google it or go onto that blog and in search area write the name. Then, as I cook, I just have my laptop open. My kids cook from my blog all the time.. I never use a cookbook for my recipes, lol.. You’ll love this method. ☺☺??
