A favorite salad recipe of mine to make for parties. Marinated mushrooms with peppers and Italian dressing. It’s a wonderful salad to make in advance for parties. Since the salad is best if kept overnight, it helps that you can make this salad the night before and just keep it refrigerated until it’s ready to be served. Winner!
So.. I have a serious, very serious love for mushrooms. It’s actually pretty bad. I mean we serve them in breakfast recipes, on different types of canapes (open-faced sandwiches), in entrees and even salads. Ha!
I am not sure how many of you attend big Slavic weddings. If you do though, you will probably notice that similar mushroom salads are always served at weddings. It’ a fantastic and easy salad to make and is so yummy. The many weddings that I have been to, it’s this kind of mushrooms salad and Olivye that is a stable on the table. And usually, the mushroom salad is one of the first to have an empty bowl.
Though I love fresh salads using romaine or lettuce, I strongly dislike serving them when I have guests. They get soggy quickly once the dressing is adding and is such a bummer. My kind of salad for parties is one that can be made in advance, makes a statement on the table and won’t get soggy quickly. So this kind of salad or the Broccoli salad or salad is what I mean.
I love packing lunches for my husband. He works so hard (he does construction), and the work is very physical. I always try to give him something extra delicious for lunch. Lunch is his little break from the hard work and to just enjoy food. Packing him a wonderful lunch, I feel like a piece of my love is with him in that lunchbox. I love making this salad and keeping it refrigerated, it keeps well in the refrigerator for days. I am able to spoil him for lunch for several days. He loves it!
Some people like to add sweet onion or red onion to the salad. I am not really a big fan. I like just the peppers. I use different colored bell peppers and it’s enough for me. Some people also like to add a clove of fresh minced garlic. If you really like garlic, you can test that out as well.
I have noted 1 bell pepper. I used like 1/3 of a yellow and orange pepper and a half of a medium red pepper. If you don’t have all three, just use a whole red pepper.
I get my mushrooms from BJ’s. Amazon carries them as well but I am not sure why they are so expensive online.

1 (30 oz) jar marinated mushrooms
1 large bell pepper
Red or sweet onion, optional
½ cup Italian dressing
Drain mushrooms and rinse thoroughly. Cover mushrooms with cold water.
Slice peppers into thin strands.
Drain mushrooms and pat dry. Add mushrooms, peppers, and dressing to bowl. Mix well. Refrigerate for at least 4 hours, or overnight.

- 1 30 oz jar canned mushroom
- 1 pepper
- Red or sweet onion optional
- ½ cup Italian dressing
- Drain mushrooms and rinse thoroughly. Cover mushrooms with cold water.
