How to Make a Blackberry Cobbler: 

  1. To a large bowl, add blackberries, sugar, cornstarch, water, cinnamon, lemon juice, and lemon zest. Stir together and transfer the blackberry mixture to a small baking dish.
  2. In a separate medium bowl, mix together the dry ingredients.
  3. Cube the butter and add it to the bowl. Mix lightly with a fork or a pastry cutter until small crumbles form. 
  4. In a separate bowl whisk together the egg and half and half. 
  5. Create a well in the center of the dry ingredients and pour in the wet ingredients. Mix until just incorporated. 
  6. Spray an ice cream scoop with baking spray and scoop biscuit batter on top of the berries creating large biscuits. 
  7. Bake the cobbler in the oven at 350°F for 30-35 minutes, or until the top is golden brown.

This easy blackberry cobbler recipe makes the perfect Spring dessert. A cobbler takes little work to put together and the result is the most delightful dessert exploding with berries.

Ingredients

cobbler filling-

  • 24 oz fresh blackberries
  • 1/2 cup granulated sugar
  • 2 Tbsp cornstarch
  • 1/4 cup water
  • ¼ tsp ground cinnamon
  • 1 Tbsp lemon juice
  • 2 tsp lemon zest

biscuit topping-

  • 1 cup all purpose flour measured then sifted
  • 1/4 cup granulated sugar
  • ¼ tsp salt
  • 1 Tbsp baking powder
  • 4 Tbsps unsalted butter cold
  • 1 medium egg
  • 1/2 cup half and half

Instructions

  • To a large bowl, add blackberries, sugar, cornstarch, sugar, water, cinnamon, lemon juice, and lemon zest. Mix and add to a 9”x13” baking dish.
  • In a separate bowl combine the flour, sugar, salt, and baking powder.
  • Cube up the butter and add it to the dry mix. Incorporate lightly using a fork or pastry cutter.
  • Preheat the oven to 350°F.
  • In a small bowl, whisk together the egg and half and half.
  • Create a well in the center of the dry ingredients and pour in the wet ingredients. Mix until incorporated.
  • Spray an ice cream scoop with no stick and begin adding scoops of the biscuit mixture to the blackberries. Once all the biscuit toppings is used, you are ready to bake!
  • Add the baking dish to the oven and bake for 30-35 minutes, or until the biscuits are golden-brown.
  • Let the cobbler cool out of the oven for 15 minutes before digging in.
  • Top with ice cream, serve, and enjoy!
