Chicken Sandwich

This recipe adds a little twist to your ordinary chicken sandwich. Chicken, spinach, mushrooms, red peppers, and goat cheese all folding into the choice of bread you prefer. This recipe is a must try!

Chicken Sandwich Recipe

Those of you that follow our blog, know my dangerous love for canapés. I seriously love them in every way shape and form; I much rather prefer an open faced sandwich. This sandwich here is no exception, I prefer the top slice of bread off, you can, of course, leave it on (as shown in pictures). A good quality bread is really great for this sandwich; you can use ciabatta, focaccia, any artesian bread or even a thick slice of Italian bread. If I use Italian bread, I like to toast it a bit. Those of you that don’t exactly like goat cheese, please just try this once and then say nah, not for me. Though I am not a HUGE fan of goat cheese, I love it in this sandwich. Chicken plus spinach, mushroom and red peppers with a hint of goat cheese in the spread, seriously a must try!

Ingredients:

½ lb chicken (1 large chicken breast)

½ tsp extra virgin olive oil

½ small red pepper

4 oz mushrooms (5-6 mushrooms)

½ cup spinach

1 oz goat cheese (or more)

3 Tbsp mayonnaise

3 Tbsp sour cream

½ tsp olive oil

Salt & Pepper

Fresh bread

Makes: 2 sandwiches

Directions:

Prepare spread; combine goat cheese, mayo, sour cream and dash of pepper.

Slice mushrooms and red peppers. In a pan, fry in olive oil 4-6 minutes, lightly salt and pepper.

Slice chicken in half. Beat until even in thickness. (My hubby purchased thin sliced chicken tenders instead of chicken breast, that is why you see 4 in my case, you have to love sending hubby to the grocery store.) Brush both sides of chicken with the extra virgin olive oil; salt and pepper both sides of chicken. Fry chicken on high heat 5 minutes (you don’t need to oil pan).

Generously cover the bread with the goat cheese spread. Add the spinach, chicken breast, peppers and mushrooms. Enjoy!.
