How to Make Lemon Curd From Scratch

  1. Whisk the eggs and sugar together in a saucepan until well combined.

2. Add the lemon juice, lemon zest, and salt. Cook on the stove over medium-low heat, whisking constantly, until the sugar fully dissolves.

3. Add the butter and continue whisking for 5–6 minutes or until the mixture thickens enough to coat the back of a spoon. Remove from heat and stir in the vanilla extract.

4. Strain the curd through a fine mesh sieve into a storage container. Let it cool, then cover and refrigerate until ready to use.

We recommend using only freshly squeezed lemon juice because of the extra ingredients in store-bought lemon juice. The flavor is so much better when using fresh lemons!

Is lemon curd sour? 

The sugar in lemon curd balances the sourness, so the filling isn’t overwhelmingly sour, but it has that recognizable zest!

Why did my lemon curd separate? 

If your lemon curd separated, that could be a sign you were cooking it on too high of a heat.

Store & Reheat

  • 4 eggs
  • 2/3 cup sugar
  • 1/3 cup fresh lemon juice from about 2-3 lemons
  • 2 tsp lemon zest
  • tsp salt
  • 6 Tbsp butter cubed
  • 1 tsp vanilla

Instructions

  • In a medium saucepan, whisk together the eggs and sugar until combined.
