Wafers and Pudding Dessert

This simple wafers and pudding dessert is perfect for any occasion. This no-bake dessert is filled with wafers, vanilla, drizzled with chocolate and fruits on top. Yum!

I apologize for not posting anything new in a while. We have had so much going on and just really haven’t had the time to sit down and write. The worse part is, I actually have many recipes ready to post, it’s just getting around to actually posting them, hehe, oh the joys of being a mamma and wifey. Anyhow, though I absolutely love baking, quick desserts are the best because you don’t always want to stand in the kitchen for hours, seriously, who wants to always do that?.;) This no-bake dessert is pretty fantastic. The inspiration for this dessert came from the Oreo Pudding Delight and the No-Bake Goodness. If you have yourself like 10 minutes of time and the ingredients needed, this dessert is one you need to try. It’s quick, yummy and will become one you will repeat.

You can also add fruit to the top or bottom of the pudding if you want, just like you see I made and posted to my Instagram feed. Or just do it as simple as I have here. It’s usually a hit with the kiddos so if you are doing a party with kids, this is great. These can also be made in little cups instead of a glass dish if you prefer like you see I did for my daughter’s birthday party.

Ingredients:

1 (12oz) Vanilla wafers pack

3.5 cups cold milk

2 (3.9 oz each) instant vanilla pudding

1 (14oz) condensed milk

8 oz cream cheese, room temp

8 oz cool whip, thawed

Chocolate topping: (optional)

½ cup chopped milk chocolate

3 Tbsp heavy whipping cream

Makes: 9×13 dish

Directions:

Take wafers and chop them into smaller pieces. Spread about 2/3 of the wafers on the bottom of a 9×13 glass dish.

By hand, whisk together cold milk and instant pudding for about 1 ½ minutes, until it begins to thicken.

In a small bowl, with a mixer, beat cream cheese. Add cream cheese and condensed milk to the pudding. Beat just until everything is incorporated. Add the cool whip, beat again.

Starting on the sides and then into the middle, pour the pudding mixture into the glass dish and over the wafers. Spread pudding evenly.

Take the remaining wafers and crush them until they are fine. Spread over the pudding.

Prepare the chocolate (this is optional). On medium heat, in a small saucepan, combine milk chocolate and heavy whipping cream. Mix until all of the chocolate has melted, remove from heat. Let the chocolate cool. Drizzle over the wafers. (I just put it in a Ziploc bag and snip off a tiny corner so the drizzles are thin).

Refrigerate for at least 1 hour (or overnight). Enjoy!.
