Vanilla Wafers Blueberry Dessert

This layered blueberry dessert with a rich cream and crushed wafers is very original. It is very eye-catching when bringing to a party and the best part is that it is a no-bake dessert. If you don’t have a large round platter, a 9×13 glass dish will work just fine. With each layer put the ingredients to the edge of the dish.

(NOTE: This dessert is a bit sweet, if you don’t want something “too” sweet, when making the fourth layer (the cream), just do an 8 oz cool whip instead of the ingredients for the 4th layer.)

How to make Vanilla Wafers Blueberry Dessert-

Prepare the 1st layer:

  1. Place vanilla wafers into a Ziploc bag. Crush with a rolling pin until fine.
  2. Take about 1 3/4 cups of the crushed wafers and place onto the serving platter (set the rest of the crumbs aside). Melt the butter and mix with the wafers. Spread out the crumbly mixture and gently pat down.

Prepare the 2nd layer:

  1. With a mixer beat the butter until creamy, slowly add the powdered sugar. Set aside.
  2. Separate the egg white and egg yolks. Beat egg yolks until creamy.
  3. Slowly add to the butter/sugar mixture. Set aside.
  4. Beat the egg whites until stiff peaks form.
  5. With a spatula, combine the egg yolks mixture with the egg whites. Mix until incorporated. Don’t overbeat.
  6. Spread this mixture over the crumbs.
  7. Spread about half of the leftover wafer crumbs over the egg mixture.

  1. In a bowl, combine cream cheese, butter, condensed milk and sugar with the mixer on medium speed. Add the cool whip.
  2. Spread over the pie filling.

Ingredients

First Layer-

  • 1 box vanilla wafers, 12 oz
  • 6 Tbsp unsalted butter

Second Layer-

  • 1 stick unsalted butter
  • 1 cup powdered sugar
  • 2 large eggs

Third Layer

  • 1 can blueberry pie filling, 21 oz

Fourth Layer

  • 4 oz cream cheese, room temp.
  • 1/3 cup powdered sugar
  • 4 oz cool whip, thawed
  • 1/3 cup condensed milk
  • 2 Tbsp unsalted butter, room temp

Instructions

First Layer-

  • Place vanilla wafers into a Ziploc bag. Crush with a rolling pin until fine.
  • Take about 1 3/4 cups of the crushed wafers onto your platter. Melt the 6 Tbsp of butter and mix with the wafers.
  • Spread out the crumbly mixture and gently pat down onto the serving platter.

Second Layer-

  • With a mixer on medium speed, beat the 1 stick butter until creamy (about 1 min), slowly add the powdered sugar. Set aside.
  • Separate the egg white and egg yolks.
  • Beat egg yolks until creamy, about 2 minutes.
  • Slowly add to the butter/sugar mixture. Set aside.
  • Beat the egg whites until stiff peaks form about 4-6 minutes (eggs at room temp will beat quicker).
  • Slowly add the egg yolk mixture to the egg whites, combine with a spatula.
  • Spread the egg mixture over the crumbs.
  • Spread about half the leftover wafer crumbs over the egg mixture.

Third Layer-

  • Add the blueberry pie filling.

Fourth Layer-

  • In a bowl combine cream cheese, butter, condensed milk and sugar with the mixer on medium speed. Turn the mixer down to a lower speed and add in the cool whip.
  • Spread over the pie filling.
  • Sprinkle the top with the remaining wafer crumbs.
  • Refrigerate for at least an hour and Enjoy..:)

Notes

    why the raw eggs? I think it would still taste the same and be safer without the eggs 🙂
