Ingredients for Beet Salad with Burrata
- Beets – Cook your beets using your favorite method. Roasted beets have a great flavor, while boiling is the easiest option.
- Greens – Use your favorite leafy greens for this salad. A spring mix, arugula, spinach, or romaine all make great options.
- Walnuts – The crunch of the walnuts is a must in this salad. Use roasted walnuts or candied walnuts for a sweet crunch. I really like the flavor that candied walnuts give.
- Burrata – Balls of burrata add a great flavor and texture to this salad.
Swap burrata: Don’t love burrata? Use goat cheese, fresh mozzarella, or your favorite soft cheese in this salad. - Fresh basil – A touch of fresh herbs brings a vibrant flavor to this salad.
- Dressing – A homemade dressing made with an olive oil base, along with lemon juice, dijon mustard, honey, and fresh garlic.

How to Prep Beets?
To prepare the beets for cooking, you’ll want to cut off the stems of each beet. Scrub the beets and rinse them with water to remove all the dirt.
What is the Best Way to Cook Beets?
There are 3 easy methods for preparing beets:
- Oven method.
- Preheat the oven to 400°F and wrap each beet in aluminum foil.
- Add the wrapped beets to a baking sheet.
- Roast about 40-45 minutes, tossing halfway through.
- Boil method.
- Place the cleaned beets into a large pot and cover with 2 inches of water. Bring the water to a boil on medium/high heat.
- Reduce the heat and cook for about 40-45 minutes, depending on the size of the beets. You’ll know they are done when they are piercable with a knife.
- Remove the beats from the pot and add them to an ice bath to stop the cooking.
- Instant pot.
- Add the instant pot rack to the pot. Place the cleaned beets in the Instant Pot and fill with water, covering them completely.
- Cook for 20-25 minutes on high pressure until you can pierce them easily, and the beets have reached the desired tenderness. Release the pressure, then remove the beets with tongs. Allow them to cool completely.

- Add protein. Make this salad extra hearty and filling with pan-seared chicken breast on top.
