Pork Feta and Mushrooms

When we were growing up, pork was the meat with ate most. It’s probably the most popular meat for most people who grew up in Ukraine. When I got married, honestly, that is what we ate most as well. Then slowly we went to chicken and beef and now, rarely enjoy pork. When I serve pork, I like it to be something truly delicious and easy to make. This recipe is one of those. The pork is so tender and I love the flavor coriander gives it, topped with feta and cheese, oh my. It’s so simple to make yet feels very “legit” and “I spend hours in the kitchen making this” when in reality it’s super simple. Even if aren’t a fan of feta or coriander, give this a try.

  • Preheat oven to 365°F.
  • Cut pork into about ¾” thickness. Beat with a meat mallet until meat is a thickness between ¼” – ½”.
  • Season with salt, pepper, and coriander on both sides.

  • Transfer meat to a baking sheet. Add the crumbled feta cheese, then mushrooms and finally mozzarella.
