One of my girlfriends made this salad for a church event and I am telling you, it was love at first bite. Don’t be discouraged by the ingredients. It may seem like an awkward combination, but it truly is something spectacular. It is probably one of my favorite salads along with the Cauliflower Salad and Layered Chicken Salad. I love the combination of the pasta shells with grapes, then the blue cheese just kicks it up a notch. So amazingly delicious and so very simple to prepare. It’s one of those salads that is great to make the night before and perfect for potlucks. Enjoy my friends.

Ingredients for Shells and Grapes Salad:

8 ounces uncooked shell macaroni

3 cups red seedless grapes, halved

½ cup chopped scallions (or green onion)

3 ounces blue cheese, crumbled

Salt and pepper to taste

1 medium garlic clove, minced

1 cup mayonnaise

3 Tbsp fresh lemon juice

2 Tablespoons chopped walnuts, optional

Serves: 4-6

How to make Shells and Grapes Salad:

Cook macaroni “al dente” according to package instructions.

Meanwhile, half grapes, chop scallions and mince garlic; add everything to a bowl.

In a bowl combine mayo, lemon juice and minced garlic. Lightly salt and pepper. Set aside.

Once pasta is cooked, drain. While pasta is hot add to bowl, add cheese, salt and pepper to taste; combine well.

Add the mayo/lemon to the bowl and mix.

Refrigerate, covered, for several hours or overnight.

Before serving, toss gently. Add walnuts if desired.

Ingredients
  • 8 ounces uncooked shell macaroni

  2. Meanwhile, half grapes, chop scallions and mince garlic; add everything to a bowl.

  3. In a bowl combine mayo, lemon juice and minced garlic. Lightly salt and pepper. Set aside.

  4. Once pasta is cooked, drain. Return back to pot, while hot add cheese and combine. Salt pepper to taste and add to the bowl with the rest of the ingredients, mix.
  5. Add the dressing to the bowl and mix well.

  6. Refrigerate, covered, for several hours or overnight.
  7. Before serving, toss gently. Add walnuts if desired.
