Slow Cooker (Crock-Pot) Chicken Fajita. Tender and so delicious.

This recipe was inspired by the Baked Chicken Fajita that I have posted. That recipe is so easy itself but there is something about slow cooker (Crock-Pot) recipes that just make my heart sing, a song of happiness. The vegetables and chicken become so juicy, tender and just melt in your mouth. Mushrooms, peppers, carrots with chicken are a fantastic combination. Not only is it a great combination but so, so easy to make. It takes like 5-minutes prep time and you have yourself an amazing dinner. A great idea for those busy evening that you have so much going on and no time to spend in the kitchen. You just prepare everything in the morning. Then, once you know when you are going to have dinner, you just turn on your slow cooker (Crock-Pot) so you have enough time either on high or low. I even like to chop all of my veggies (lettuce, cucumber, tomatoes) early in the morning, cover them and refrigerate until dinner is ready to be served. See and now that you have all of this time on your hand, you can like enjoy your family, or like read a book, or do a craft with the kiddos or sneak in a catnap and best of all relax while you would have been in the kitchen. We enjoy these fajitas with rice, lettuce, shredded lettuce, tomatoes, cucumbers, a generous portion of sour cream, cilantro and freshly squeezed lime.  We love to toast tortillas on a dry skillet and wrap them in foil to keep them warm as the remaining tortillas are heated. Then once everything is ready and the family is around the kitchen table, a nice meal is enjoyed.

This recipe definitely isn’t our traditional Ukrainian/Russian food my husband and I are used to growing up. It also isn’t the more American food our children like. However, this Mexican-inspired dish will become a favorite in your home. True story.

Ingredients for Slow Cooker Chicken Fajita:

2 pounds chicken breast

1 – 2 peppers (I used 1 ½ peppers), sliced

1 large carrot, julienned

½ large onion, sliced

6 oz mushrooms, sliced

1 cup tomatoes, diced

2-3 garlic cloves, chopped

Cilantro, optional

Lime, optional

Seasoning-

1 tsp salt

1 ½ tsp paprika

½ tsp pepper

¼ tsp ground cumin, optional

½ tsp ground chili pepper

Serves: 4 – 6

Directions:

Dice tomatoes.

Slice chicken and pepper into strands. Slice onion and mushrooms. Julienne carrots. Chop garlic. Dice tomatoes.

In a bowl of the slow cooker, add the diced tomatoes and garlic. Then all the vegetables and chicken.

Combine all the ingredients for the seasoning. Season ingredients and toss gently, add remaining seasoning and toss gently again.

Close bowl and cook about 5 hours on low and 3 – 4 hours on high. Cooking time will vary depending on your slow cooker and the size you cut your ingredients. Gently stir everything and enjoy as desired.
