  • Grate zucchini. Squeeze zucchini to remove liquids from zucchini. You can use your hands or we like this fine sieve.
  • Beat eggs and add to grated zucchini.
  • Add the minced garlic, ham, Parmesan cheese, sriracha, and salt. Mix well. Stir in flour.
  • Cook fritters.
  • This recipe will yield about 18 medium patties.

TIP: If you like spicy foods, add more Sriracha (or any other hot sauce), to taste. The indicated amount isn’t overpowering, just gives the fritters a slight kick.

  • Heat oil in a large skillet, add zucchini mixture.  Cook 2-3 minute per side. Flip gently. 
  • Meanwhile, combine the ingredients for the sour cream dipping sauce. 

Notes

**Use a favorite type of shredded cheese such as colby jack, mild cheddar, and mozzarella.
