Expert Tip for Cheese!

Shred a block of cheese for the best melting. Pre-shredded cheese comes with a film that keeps it from incorporating as well as freshly grated cheese!

Substitutions and Variations:

All add-ins, substitutions, and variations to the recipe you want to make.

  • Add protein: Make this soup extra filling by adding leftover ham, or shredded chicken, or Italian sausage like in the classic zuppa toscana.
  • Chicken broth: You can substitute chicken broth for beef broth, or even a homemade bone broth.
  • Vegetables: Add corn, bell pepper, carrots, or peas to make this soup for veggie-full.
  • Milk: This recipe calls for whole milk, but you can use half and half to make it richer or 2% to make it even lighter.

Recipe FAQs

What potatoes are best?

You can use russet potatoes or Yukon gold potatoes.

Can I skip out on sour cream?

You can omit the sour cream; however, it adds a delicious light acidity to such a rich soup. I’d recommend adding a light squeeze of lemon in its place.

Why is my soup not thickening?

You should allow your soup to reduce longer on low to get a thicker consistency and creamy texture.

Do I need to cook my potatoes before adding them to the soup?

The potatoes are cooked in the crockpot along with the rest of the ingredients to absorb the delicious broth.

Store & Reheat

  • Storage. Store soup leftovers in the refrigerator for up to 3 days in an airtight container.
  • Reheat. Warm on the stove over low heat until hot.
  • Freeze. Pour soup into a freezer-safe container to freeze and store for up to 3 months. Reheat: Allow soup to thaw in the fridge before reheating on the stovetop.
