Ham Mushroom Cheese Open Faced Sandwich

It is safe to save we love open-faced sandwiches, canapes, or byterbrodi in our good old Uki talk. That is why I love a good ham mushroom cheese open faced sandwich. {This here is a superb combination for the cheese and mushroom lovers out there. I know you exist, or I sure do hope I am not the only one out there. Anyhow, this one is for y’all. Mushrooms, ham, tomatoes with cheese and toasted to crunchy perfection. Just oozes with flavor as you take a bite. Oh so yummmmaly good. 🙂 } I am not sure about you, but when I have lunch it’s not always fancy, or better yet, it’s barely ever fancy. Though stay-at-home moms have more time than working moms, the last thing on my mind is to spend an hour in the kitchen preparing lunch. The kiddos and I usually finish leftovers from the night before or have a quick sandwich. My kids very strongly dislike school lunch, so I pack every day for them. Therefore, there is always lunch meat in the fridge. Cold sandwiches do get tiring at times and I just love having warm sandwiches. I always like to throw together whatever lunch meat I have, add cheese or whatever else is on hand and toast it, it’s oh so good. If you have been following me, you will notice a love of mushrooms on my end, it’s terrible. I manage to stick them in whenever they can be added. Surprised there isn’t a cake with mushrooms as the filling or décor (that is a good idea though, hhhmmm;). We have manages to use sauteed mushrooms as main decor in THIS salad though, she’s a gorgeouss..).

This is also a great way to use leftover Ham from Easter or Thanksgiving :).

Ingredients:

1/2 lb ham

1/2 cup sliced cherry tomatoes

12 oz mushrooms

1 tsp oil

1 cup cheese (I use Kraft Mexican four cheese)

3 Tbsp ranch

2 -3 tsp crumbled blue cheese

2 Tbsp mayo

2 oz cream cheese, room temp

Salt, pepper

1 French bread

Makes: 20-24 sandwiches, depends on the thickness of your bread slices

Directions:

Clean and slice mushrooms. Add to pan and saute until pan is dry. Lightly salt and pepper, cook another three minutes or until mushrooms are cooked and golden. Set aside to cool.

Chop ham. Slice tomatoes.

In a bowl, combine Ranch, blue cheese, mayo, cream cheese, and lightly salt and pepper.

In a bowl, combine all the ingredients.

Slice French bread (or any other bread).

Put the ingredients onto the bread. (If you like things super cheesy sprinkle cheese on top of the ingredients before baking. Yes, we do this. There is never too much cheese.)

Bake in preheated oven to 355°F for about 10-12 minutes.

Serve. (If you only use half the mixture. Just refrigerate the rest and it can be used the following day.)
