Baked juicy and tender chicken thighs recipe that will become a regular in your kitchen. Such a basic recipe but oh so good.
Summer is a busy time for our family. We try to stay outdoors as much as possible and make memories with our children. That is why I absolutely love one pan meals during busy days. I love prepping dinner first thing in the morning while the kids are still waking up and haven’t fully started the day. Then, before we all head outside and start the day, I already have dinner ready to throw into to oven when the Mr. is on his way home. Chicken thighs are my favorite to bake. If marinated correctly, they come out so juicy and tender. This is probably my favorite way to make thighs. Marinating is so easy and quick and most everything is on hand.
So, if you are like me, prep as much as possible early in the day so you are free the remainder of the day. Follow instructions, once covered with foil, refrigerate chicken until you are ready to bake them. If we are having mashed potatoes with the chicken, I peel potatoes as well and cover them with cold water and refrigerate. Then all I have to do is bake the chicken and mash the potatoes and dinner are served. Unless it’s a salad that needs to be enjoyed immediately, I prep my salad as well and then all I have to do is add the dressing and mix. It’s so easy that way. Makes this mama’s life so much easier and happier.
Few other one pan meals you might enjoy:
3 lbs chicken thighs
1/4 cup mayonnaise
1 Tbsp olive oil
4 garlic cloves, minced
2 tsp salt
1/4 tsp pepper
1/2 tsp chili pepper
1 tsp paprika
In bowl combine mayo, olive oil and minced garlic. Add chicken thighs and coat with mayo mixture.
Prepare seasoning. In a separate combine the salt, pepper, chili pepper and paprika. Season boat sides of chicken with the seasoning. Add chicken thighs to baking dish. Cover with foil. Set aside to marinade at least 3 – 4 hours.
Bake about 45 minutes at 375°F. Remove foil and broil for 8-10 minutes, until tops of thighs are crispy.
