Easy Baked Chicken Recipe

I am a huge fan of easy chicken recipes. Having a large family, that’s almost a MUST! Chicken is an easy protein to work with. It’s so versatile when marinating and there’s not too much that can go wrong!

Chicken thighs are my favorite cut of chicken to bake in the oven. If marinated correctly, they come out so juicy and tender. This recipe is probably my favorite way to bake thighs. Marinating is so easy and quick, like 10-minutes total and most all the ingredients are on hand.

Can I stip the marinade time?

Marinading the chicken 3-4 hours is preferred, but NOT necessary. These easy chicken thighs will taste just as wonderful if you prepare them and cook them immediately. They just won’t be as tender.

Can I prepare Oven Chicken Thigh in advance?

Yes, this is the perfect recipe to prepare in advance! You can marinade the chicken the day before in the mayo garlic marinade.

Once chicken marinades, I season and place the chicken in the casserole dish I will be using in the morning. Then, all I have to do is just bake the chicken thighs for dinner. So easy and eliminates extra prep work, that’s extra time you can be spending time with your loved ones. Winner!

Can I taste the mayo?

You will not be able to taste the mayo once the chicken is baked. It is used as a tenderizer and once the seasoning is added and chicken is baked, you’d never know there was mayo involved!Β  πŸ™‚

Chicken thighs in a casserole.


In a bowl combine mayo, olive oil and minced garlic. Add chicken thighs and coat with mayo mixture.

Marinade chicken in mayo mixture.

Prepare theΒ seasoning. In a separate combine the salt, pepper, chili pepper and paprika.Β Season boat sides of chicken with the seasoning. Add chicken thighs to baking dish. Cover with foil. Set aside to marinate at least 3 – 4 hours in the refrigerator.

Season chicken thighs and set aside to marinade.

How long should I bake chicken thighs in the oven?

Bake boneless, skinless chicken thighs about 45 minutes at 375Β°F. Remove foil and broil for 8-10 minutes, until tops of thighs are crispy.

Keep in mind, the size of the thighs and different ovens may slightly affect the baking of the chicken thighs. It is best to test the readiness of the thighs with a cooking thermometer.Β  Cooked chicken should read 165Β°F internal temperature. (Check the thickest part of a chicken in the center of it. :)..)

Can I use the leftover for other recipes?

The leftover tender thighs work great as in recipes that cooked meat is required. So juicy. You can also cover and reheat this dish if desired.

  • 3 lbs chicken thighs (boneless & skinless)
  • 1/4 cup mayonnaise
  • 1 Tbsp olive oil
  • 4 garlic cloves, minced
  • 2 tsp salt

      Christina, if you have time to for it to marinade for several hours, the fridge is where it needs to go. πŸ™‚ If you’re pushed for time, leave it on the counter for a 1/2 an hour. It will marinade and penetrate into the meat quicker at room temp.

      You can do chicken breast, however, you’d need to bake it less as chicken breast bakes much quicker and you don’t want it to dry out. I cannot give you a baking time as it will depend on the thickness of the breast.

    Hello. Thanks for sharing this recipe. Sounds so good. My only concern is I have some picky eaters on my hands. Some do not like Mayo.       You shouldn’t have to unless it’s a really large thigh. The internal temp reading should be 165F. If you notice about 15 minutes until the end of cooking that the chicken just doesn’t look ready, you can finish it off by covering it until chicken is fully cooked. Then, remove foil to finish off the crunchiness of the chicken. πŸ™‚ Hope that helps. Enjoy, it’s a wonderful dish.

        I’ve done this twice…the first time I only marinated them for 1 hour, because I didnt read the whole recipe beforehand…delicious. The second time I used bone-in thighs, again delicious, didnt need extra time, I followed the same timing. Today Im going to do it with bone-in thighs AND drums…I will do the drums for an extra 15 min. as suggested, here’s hoping they’re just as good. Terrific recipe!
